Holiday Coconut Macaroons

These are moist & chewy -- a pretty addition to any cookie platter.

Yields: 24 cookies

Ingredients

  • 4  egg whites
  • 23 cup sugar
  • 14 cup flour
  • 18 teaspoon salt
  • 12 teaspoon  almond extract
  • 4  cups coconut
  • 14 cup  chopped  glace red cherries
  • 14 cup  chopped  glace green cherries (or use 1/2 cup of glace mixed fruit instead of the cherries)

Directions

  1. Preheat oven to 325F degrees.
  2. Grease& lightly flour cookie sheets.
  3. In medium bowl, beat egg whites until foamy.
  4. Add sugar, flour, salt& almond extract; blend well.
  5. Stir in coconut& cherries (or fruit mix).
  6. Drop tablespoons onto cookie sheet, approximately 2 inches apart.
  7. Bake 13-17 minutes or until set& lightly browned.
  8. Immediately remove from cookie sheets& cool completely.
