Holiday Chocolate Nut Squares

Ingredients
- 4 ounces sugar
- 4 ounces unsalted butter
- 1 tablespoon cocoa powder
- 1 egg, beaten
- 1⁄2 teaspoon vanilla extract
- 6 ounces digestive biscuits
- 3 ounces grated fresh coconut
- 2 ounces walnuts, finely chopped
- 3 tablespoons water
- 4 ounces unsalted butter
- 1 lb icing sugar, sieved
- 2 tablespoons custard powder
- 6 ounces dessert chocolate, broken into pieces
- 2 ounces walnuts, roughly chopped
Directions
- Heat the butter in a saucepan until melted.
- Stir in the sugar, cocoa powder, egg, vanilla, biscuits, coconut and walnuts and mix together well.
- Spread the mixture over the base of a Swiss roll tin 33x23 cm or similar.
- Leave in the fridge while you make the filling.
- Heat the water in a pan. Add the butter, sugar and custard powder and beat all together until soft and well mixed.
- Spread over the biscuit base and return to the fridge.
- Melt the chocolate in a microwave or in a pan until melted. Drizzle the chocolate evenly over the filling.
- Sprinkle with the nuts and return to the fridge.
- When it is cool and set, cut into required number of pieces.
- Store in an airtight container.
