Holiday Carrots Surprise

Ingredients
- cooking spray
- 4 cups water
- 1⁄4 teaspoon salt
- 4 (10 ounce) packages matchstix carrots
- 1 teaspoon cinnamon
- 2 tablespoons light brown sugar
- 1⁄2 cup butter
- 2 (10 ounce) jars all fruit peach fruit spread
- 1 teaspoon rum flavoring (optional)
- 2 eggs, beaten
- 1⁄4 cup heavy whipping cream
- 1 1⁄2 cups miniature marshmallows
Directions
- Preheat oven to 400°F Spray 2-quart round glass baking dish with cooking spray.
- Bring water and salt to a boil. Add carrots to boiling water and cook until very tender. Remove from stove and drain very well. (Remove all water).
- In a large bowl, mash carrots until smooth. Add to the mashed carrots the cinnamon, sugar and butter. With mixer, beat until blended.
- Add fruit, rum flavoring, eggs, and whipping cream. Beat until mixture is smooth.
- Pour into baking dish, bake 45 minutes or until set. Remove from oven.
- Top with miniature marshmallows and bake for a few minutes or until marshmallows start to melt and begin to brown. (Do not overcook.).
