Holiday Carrots Surprise

What's the surprise? Peach all-fruit spreadable fruit. This is similar to many carrot souffle or sweet potato souffle recipes. My DH absolutely will not eat carrots, but this sounds so good that maybe it will make him change his mind! From the Georgia Egg Commission. Show more

  1. Preheat oven to 400°F Spray 2-quart round glass baking dish with cooking spray.
  2. Bring water and salt to a boil. Add carrots to boiling water and cook until very tender. Remove from stove and drain very well. (Remove all water).
  3. In a large bowl, mash carrots until smooth. Add to the mashed carrots the cinnamon, sugar and butter. With mixer, beat until blended.
  4. Add fruit, rum flavoring, eggs, and whipping cream. Beat until mixture is smooth.
  5. Pour into baking dish, bake 45 minutes or until set. Remove from oven.
  6. Top with miniature marshmallows and bake for a few minutes or until marshmallows start to melt and begin to brown. (Do not overcook.).
