Hoe Cakes - Hush Puppy Style

We love hushpuppies, but my husband is from the south and was craving hoe cakes. So I decided to combine the two and this is what was created. We especially like these along side BBQ'd meat or with fish.

• Yields: 10-12 hoecakes

Ingredients

• 1 (8 1/2ounce) package  Jiffy corn muffin mix
• 1  egg
• 2  tablespoons butter, melted
• 3⁄4 cup buttermilk
• 1⁄2 teaspoon garlic powder
• 3  green onions, minced
•  cayenne

Directions

1. Preheat and prep a pan as you would for pancakes -- lightly oil.
2. Blend all ingredients, batter will be slightly lumpy.
3. Check pan to make sure it is hot enough (when a few drops of water "dnace" on the surface).
4. Pour batter to make about a 3 inch hoe cake.
5. Flip when first side is lightly golden, and repeat.
6. Continue until batter is gone.
