Hobo Potatoes

Great side dish for the grill.

• Serves: 6

Ingredients

• 2  cups  peeled cubed potatoes
• 1  cup  chopped onion
• 1  cup  thinly sliced carrot
• 1  cup  sliced celery
• 2  tablespoons water
• 1⁄2 teaspoon salt
• 1⁄8 teaspoon pepper
• 8  slices bacon, in 2 inch pieces
•  butter

Directions

1. Place mixture on 18x18 inch square of foil - top with bacon and dot with butter. Wrap securely with a double fold seal. Place on grill 4-6 inches from med high coals. grill for approximately 25-30 minutes.
