High Protein French Toast With BLUEBERRIES

Ingredients
- 2 slices of sara lee multigrain bread
- 1⁄4 cup unsweet soymilk
- 46 g egg whites
- 20 g whey protein, isolate flavored (vanilla, cinnamon, etc)
- 1 teaspoon vanilla extract
- 1 dash cinnamon
- 40 g frozen blueberries
- sugar-free maple syrup
Directions
- Heat a large pan at medium heat on the stove and spray with oil.
- In a small, shallow bowl, whisk together the egg whites, whey protein, milk, vanilla, and cinnamon.
- Dip your bread into the mixture and place both slices on the pan.
- Pour any left over egg protein mixture over your bread slices on the stove.
- Flip once the underside is crispy and cook for about 3-5 minutes on the other side.
- Place the frozen blueberries in a small bowl with 2 teaspoons of water and microwave for 45 seconds. Make sure to cover!
- When your french toast is done, place on a plate and top with the warm blueberries and sugar free syrup.
