High Protein Crustless Quiche

- Preheat the oven to 180°C/Gas 6.
- Wash and dice the zucchini.
- Pour 200ml of salted water in a large casserole, with the Nutmeg & pepper and bring to the boil.
- Place the courgettes into the water and boil for 2 minutes.
- Add the Wheat & Oat Bran and let cook for a further minute stirring constantly.
- Remove from heat.
- In a clean bowl, beat the eggs together with the Fromage Frais, Quark, onions and Gruyere and season with salt and pepper to taste.
- Pour into a silicon quiche mold and bake for 30 minutes.
- This dish may be enjoyed fresh from the oven or cold.
