High-Protein Crepes

High protein, low carb crepes. Delicious for breakfast, dessert or a filling snack.

Serves: 1

Yields: 3 Crepes

Ingredients

  • 2  large eggs
  • 1  scoop  whey protein powder (I used Optimum Nutrition in Birthday Cake flavor)
  • 2  tablespoons heavy cream
  •  fat (for cooking, butter, ghee or oil of choice)

Directions

  1. Combine all ingredients well with a whisk or fork. A blender or nutribullet can be used, but isn't necessary if mixed well.
  2. Melt fat in a 6 inch frying pan over medium low heat.
  3. Add 1/3 of the batter to the pan and swirl to coat evenly.
  4. Flip when small bubbles form on surface and crepes slides easily around in pan.
  5. Cook an additional minute or so.
  6. Serve warm with butter or whipped cream.
