High Fiber Prune Bread

Ingredients

  • 2  cups  all-bran cereal, Kellogg's
  • 23 cup prune juice, from cooked prunes
  • 23 cup buttermilk
  • 12 cup sugar
  • 23 cup prune, pitted, cooked and chopped
  • 1  egg
  • 1 14 cups flour
  • 14 teaspoon salt
  • 1 12 teaspoons baking soda
  • 1  tablespoon butter or 1  tablespoon margarine
  • 12 cup  nuts, chopped (optional)

Directions

  1. Soak bran in prune juice and buttermilk.
  2. Cream sugar and butter throughly then add the egg and beat well.
  3. Add bran mixture.
  4. Sift the flour with the salt and baking soda and add to the mixture.
  5. Now add the nuts, if you like.
  6. Stir only until flour disappears.
  7. Bake in a greased loaf pan (9 1/2" by 5 1/2") in a 325 degree oven for an hour and 20 minutes.
