Hg So-Good Spinach Bites

If it's spinach, it must be good! Easily veganized with appropriate substitutions; I also sometimes nix the cereal and use a mixture of half wheat bread crumbs/ half ground flax seeds, increases the fat content but its good Omegas. Show more

Yields: 18 balls

Ingredients

  •  one 10-oz . package frozen chopped spinach, defrosted and thoroughly patted dry
  • 12 cup  finely chopped onion
  • 13 cup  fiber one  all-bran cereal (original)
  • 14 cup  reduced-fat parmesan cheese
  • 14 cup  fat-free  liquid egg substitute
  • 3  tablespoons fat free cream cheese, room temperature
  • 1  tablespoon light margarine
  • 34 teaspoon  minced garlic
  • 34 teaspoon  italian seasoning
  • 14 teaspoon salt
  • 18 teaspoon black pepper

Directions

  1. Preheat oven to 350 degrees.
  2. In a large bowl, combine all ingredients except for the Fiber One, and stir until completely mixed.
  3. In a food processor or blender, grind Fiber One to a breadcrumb-like consistency. Add Fiber One crumbs to the large bowl and mix until integrated.
  4. Prepare a baking sheet by lightly spraying it with nonstick spray. Scoop out about 1 tablespoons of the mixture, form it into a ball with your hands, and place it on the baking sheet. Repeat with the rest of the mixture, yielding a total of about 18 balls.
  5. Bake in the oven for 20 minutes. Allow to cool slightly, and then have a ball (or several)!
