Herb's Beef Steak-Potato Scallop

My wife makes this every so often and I can only say it is heavenly good

Ingredients

  • 1  lb  round steak, 1-inch thick
  • 3  tablespoons flour
  • 3  tablespoons shortening
  • 3  onions, small thinly sliced
  • 3  tablespoons flour
  • 1 12 teaspoons salt
  • 14 teaspoon pepper
  • 18 teaspoon thyme
  • 18 teaspoon  garlic salt
  • 2  cups water
  • 3  medium potatoes, pared & thinly sliced
  • 18 teaspoon salt
  • 18 teaspoon paprika

Directions

  1. Heat oven to 350 degrees.
  2. Cut meat into 1" cubes.
  3. Coat with flour.
  4. Melt shortning in skillet.
  5. Brown Meat.
  6. Add Onion.
  7. Cook & stir until onion tender.
  8. Pour into ungreased 2 Qt casserole.
  9. Sprinkle with 3 tbs flour, salt pepper, thyme and garlic salt.
  10. Pour water over mixture, cover casserole.
  11. Bake 45-60 minutes until meat is tender.
  12. Increase oven temp to 450 degrees.
  13. arrange potatoes on meat.
  14. Sprinkle salt & paprika.
  15. Bake uncovered about 30 minutes till potatoes are tenter.
