Herbed Vinaigrette - South Beach

Ingredients
- 1⁄2 cup white vine vinegar
- 1⁄2 cup extra virgin olive oil
- 2 tablespoons chopped fresh basil
- 2 tablespoons choppd fresh tarragon
- 2 tablespoons chopped parsley
- 2 tablespoons fresh marjoram
- 2 teaspoons chopped fresh oregano
- 2 tablespoons capers, drained and chopped
- 1 teaspoon Dijon mustard
- 1⁄2 teaspoon sugar substitute
- ground black pepper (optional)
Directions
- In a jar with a tightly fitting lid, combine the vinegar, oil, basil, tarragon, parsley, marjoram, oregano, capers, mustard, sugar substitute, and pepper, if using. Close the jar tightly and shake vigorously. Refrigerate until serving. (Keep covered in the refrigerator for 1 week).
