Herbed Orange Goat Cheese Spread

Yields: 1 1/2 cups
Ingredients
- 8 ounces soft fresh goat cheese
- 1⁄4 cup sour cream
- 1⁄4 cup chopped pimento stuffed olive
- 1 scallion, green and white part, finely chopped
- 2 tablespoons finely chopped parsley
- 1 tablespoon finely chopped fresh chives
- the zest from 1 orange, finely chopped
- salt & freshly ground black pepper
Directions
- Combine the goat cheese and sour cream in a bowl.
- Mix with a fork until thoroughly blended and fold in the remaining ingredients.
- Refrigerate covered for at least 1 hour before serving.
- Serve with crackers, melba toast, or thinly sliced and toasted rye or pumpernickel bread.
