Herbed Baked Potatoes

Ingredients
- 6 cups raw potatoes, diced
- 1 large onion, minced
- 1 cup celery, minced
- 1⁄4 cup fresh parsley
- 1⁄4 cup butter, melted
- 1 1⁄2 teaspoons salt
- 1⁄8 teaspoon pepper
- 1 teaspoon poultry seasoning
Directions
- Cook potatoes in small amount of boiling water, 5 minutes and drain.
- Add remaining ingredients. Toss to mix well.
- Put in buttered dish (11 x 9. or there abouts).
- Cover (put in frig to cook next day. bring to room temperature). OR.
- Bake 350 for 30 minute.
- Uncover 10 minute.
- Fluff with fork.
