Heirloom Tomatoes With Burrata

Ingredients

  • 12 cup  balsamic vinegar
  • 12 cup olive oil (extra virgin)
  • 12 teaspoon black pepper, freshly ground
  • 14 teaspoon sea salt
  • 4  cups arugula, loosely packed
  • 2  lbs  heirloom tomatoes, cut into 1/4-inch-thick slices
  • 14 teaspoon black pepper, freshly ground
  • 18 teaspoon sea salt
  • 1  lb  burrata cheese, quartered (or fresh mozzarella cheese)
  • 14 cup fresh basil leaf

Directions

  1. Whisk together first 4 ingredients to make vinaigrette.
  2. Arrange arugula on 4 plates.
  3. Top with tomatoes; sprinkle with 1/4 teaspoon pepper and 1/8 teaspoon salt.
  4. Top with cheese.
  5. Drizzle with vinaigrette, and sprinkle with basil.
