Hearty Taco Salad

Serves: 4-6
Ingredients
- 1 lb ground beef
- 1⁄2 yellow onion, diced
- 1 (1 1/4ounce) packet taco seasoning
- 1 (11 ounce) can mexicorn, drained
- 1 (15 ounce) can black beans, drained
- 1 (16 ounce) bottle Catalina dressing, divided
- 1 (14 1/2ounce) bag Fritos corn chips
- 2 cups shredded cheese (I use Mexican blend)
Directions
- Brown ground beef with onion. Drain & return to pan. Add taco seasoning & prepare as directed on package. Set meat aside to cool.
- Mix beans, corn, and cheese in a large bowl. Add cooled beef. Add half a bottle of Catalina dressing and about half the Fritos. Mix well.
- Add Catalina dressing to taste. Serve over remaining Fritos or rice.
