Hearty Taco Salad

The best taco salad recipe! Very filling & tastes great the next day. Super easy to double to feed as many as you need. Show more

Serves: 4-6

Ingredients

  • 1  lb ground beef
  • 12 yellow onion, diced
  • 1 (1 1/4ounce) packet  taco seasoning
  • 1 (11 ounce) can  mexicorn, drained
  • 1 (15 ounce) can black beans, drained
  • 1 (16 ounce) bottle  Catalina dressing, divided
  • 1 (14 1/2ounce) bag  Fritos corn chips
  • 2  cups  shredded cheese (I use Mexican blend)

Directions

  1. Brown ground beef with onion. Drain & return to pan. Add taco seasoning & prepare as directed on package. Set meat aside to cool.
  2. Mix beans, corn, and cheese in a large bowl. Add cooled beef. Add half a bottle of Catalina dressing and about half the Fritos. Mix well.
  3. Add Catalina dressing to taste. Serve over remaining Fritos or rice.
