Ready In: 55 mins
Serves: 4-6
Ingredients
- 1 lb ground turkey breast
- 2 (28 ounce) cans prepared spaghetti sauce
- 1 (15 ounce) can diced tomatoes, undrained
- 1 tablespoon italian seasoning
- 1 small onion, chopped

- 1 (16 ounce) package frozen chopped spinach
- 1 cup pearl barley (dry)
- 1 teaspoon chicken bouillon
- parmesan cheese (to taste)
Directions
- In a medium sauce pan, bring chicken bouillon and 2.5 c of water to a boil. Add barley and cook on low, covered, for 45 minutes. Barley should be tender but still chewy with a firm bite.

- Simmer sauce over medium heat until turkey is cooked, about 30 minutes.
- Add spinach and simmer an additional 10 minutes to heat.
- Serve meat sauce over barley and top with Parmesan cheese.
