Hearty Lentil & Ham Soup

My kids love this soup, friends who think they don't like lentil soup, love this soup. Hearty, and delicious on a crisp fall day, warms you to the soul on a cold snowy winter night. I like to serve this with our favorite cornbread.

• Serves: 6-8

Ingredients

• 2  cups lentils
• 2  cups ham, diced small
• 1  medium onion, chopped
• 1  bay leaf
• 1  teaspoon salt
• 1⁄2 teaspoon pepper
• 1 (15 ounce) can diced tomatoes
• 1⁄2 teaspoon oregano
• 1  cup carrot, diced
• 8 -10  cups water

Directions

1. Mix all ingredients in large stock pot.
2. Simmer 2-3 hours.
3. Remove bay leaf.
4. Serve.
