Hearty Jumbot

Ingredients
- 1 lb Italian pork sausage (hot optional)
- 2 garlic cloves, minced
- 1⁄3 cup red onion, chopped
- 1⁄2 cup red bell pepper, chopped
- 1 stalk fennel, chopped
- 8 ounces black beans, drained
- 8 ounces corn, drained
- 6 ounces frozen chopped spinach (drained)
- 1 (20 ounce) bag Simply Potatoes Diced Potatoes with Onion
- 1⁄4 cup seasoned bread crumbs
- 1⁄2 teaspoon cumin
- 1 dozen egg (optional)
Directions
- Remove the sausage from its casing and crumble into a pan. Brown the meat and add the onions, red bell peppers, fennel and garlic. Saute this together for 5 minutes and then add potatoes to the pan along with the cumin. Cook mixture for another 5 minutes on a low flame. Add the black beans, corn and spinach and mix well. Place the mixture in a casserole dish and sprinkle the bread crumbs on top. Bake @ 350 degrees for 30 minutes. Serve it with scrabble eggs if desired.
