Hearty Hash Brown Soup

Very good recipe from our local newspaper. Makes a large batch.

  1. In a soup kettle or Dutch oven combine the first 7 ingredients. Bring to a boil.
  2. Reduce heat, cover and simmer for 20 minutes or until vegetables are tender.
  3. Mash vegetables with cooking liquid
  4. Add soup and milk, stir until smooth.
  5. Add ham, parsley and garlic salt. Simmer for 10 minutes or until heated through.
  6. Garnish with bacon.
