Hearty Breakfast Casserole

Great breakfast casserole, that could also be made for brunch, or dinner.

Yields: 1 casserole

Ingredients

  • 1 (8 ounce) package  fully cooked bacon
  • 1 (10 count) package  biscuits
  • 8  eggs
  • 1 (8 ounce) package  velveeta shredded cheese
  • 14 cup sour cream
  •  salt (to taste)
  •  pepper (to taste)
  •  diced green onion (for garnish)

Directions

  1. Preheat oven to 350 degrees.
  2. Lightly spray a 9x13 inch pan with cooking spray.
  3. Quarter biscuits, and place at bottom of pan.
  4. Layer with cooked bacon and shredded cheese.
  5. In a mixing bowl, whisk together eggs, sour cream, salt, and pepper and pour over cheese and biscuits.
  6. bake for 30-40 minutes or until golden brown.
  7. Allow to cool 5-10 minutes before serving.
  8. Garnish with onions, if desired.
