Heart Healthy Apple Pancakes

Ingredients
- 1 1⁄3 cups whole wheat all-purpose flour
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon cinnamon
- 1 egg
- 1 tablespoon honey
- 1 cup low-fat milk
- 1 tablespoon applesauce
- 1 medium apple, peeled, sliced thinly, and cut into bite-sized pieces
- chopped walnuts (optional)
- confectioners' sugar (optional)
Directions
- In a bowl, blend the flour, salt and cinnamon together.
- In a separate bowl, whisk the egg. Add honey, milk and applesauce. Add to dry ingredients and mix until incorporated.
- Fold in apples and walnuts (optional).
- Pour by 1/2-cupfuls onto a lightly greased hot griddle, then spread into large circles.
- Flip pancakes when bubbles form. Cook until golden brown and apples are tender.
- Top with remaining applesauce and a sprinkle of confectioners sugar.
