Healthy Zucchini Bread

A lower fat, lower sugar take on an old classic. The applesauce and orange juice add natural sweetness and flavor (particulary the oj for flavor). I plan to play around this and eventually use honey or nectar instead of sugar, as I don't like to use processed or alternate sweetners any more than I have to. Note: the loaves tend to be a bit short, I do that for portioning so if you prefer 1 big loaf go with one loaf pan or a square cake pan (9x9 or so works). Show more

  1. Preheat oven to 350, grease 2 9x5 loaf pans.
  2. Combine zucchini and all wet ingredients in one bowl (big) and dry ingredients in a separate bowl. Add the dry ingredients to the wet in 3rds stirring well after each addition. Feel free to add a little more orange juice at this point if the batter looks dry.
  3. Place half the batter in each loaf pan and bake appproximately 45 minutes or until done ( a knife or toothpick inserted in the middle should come out clean).
  4. Enjoy (semi) guilt free :-).
