Healthy Whole Grain Waffles (Adapted from Lorna Sass)

You can't be afraid of a little fat here, but it's all good... in the original Lorna Sass recipe, she has you make up your own "waffle mix" which you then keep in the freezer, ready to use. I love it, it makes making waffles super fast and easy. I grind my own wheat and corn, and sometimes substitute spelt or other whole grain flour for wheat, or with the wheat. I double the mix and it lasts even longer (I have a lot of hungry boys to feed!) But in order to make this work with the right serving size/ingredients/nutrition info, I have to divide it into one serving. Here is the original amount to make up the waffle mix: 3 cups flour 1 cup cornmeal 2 tsp salt 1 T baking powder 1 tsp baking soda 2 tsp cinnamon Then use one cup of the mix with the wet ingredients to make one batch.   1. Combine dry ingredients. Combine wet ingredients. Mix together. Scoop onto a buttered, hot waffle iron.
