Healthy Vegan Berry Muffins

Ingredients
- 1 tablespoon ground flax seeds
- 3 tablespoons water
- 1 cup whole wheat flour
- 1⁄2 cup spelt flour
- 1⁄2 cup oat flour
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 1⁄2-3⁄4 cup artificial sweetener (I use sucanat)
- 3⁄4 cup almond milk
- 1⁄3 cup applesauce (You can use pumpkin, fig or prune puree as well)
- 1 teaspoon vanilla extract
- 1 cup berries (frozen)
Directions
- 375 degree preheated oven You will a 12 cup muffin pan.
- Mix together in a medium bowl and set aside the Ground Flax Seeds and Filtered Water.
- Mix the dry ingredients together by sifting in a large mixing bowl.
- Add the milk, applesauce and extract to the flax/water mixture.
- Add the wet ingredients into the dry mix bowl stirring until just mixed.
- Add the berries and stir until just mixed.
- Spoon into muffin tins and bake for 20-25 minutes.
- Let cool a few minutes on a wire rack.
- Top with Earth Balance vegan spread and enjoy! :).
