Healthy Spring Mix

This is a one-serving salad I like to make for lunch after I come home from the gym. I add whatever vegetables I happen to have in my refrigerator at the time; it could be cucumbers, peppers, carrots, mushrooms, olives, tomatoes and even leftover grilled chicken. I try and slice and dice the vegetables as soon as I get home from the store and I am able to whip up this healthy meal in no time. Just add your favorite dressing. Show more
