Healthy Pumpkin Pancakes

Ingredients
- 1⁄2 cup fiber one pancake mix
- 1⁄4 cup canned pumpkin
- 3⁄4 cup water (for thicker pancakes, use less water)
- 1 1⁄2 teaspoons vanilla extract
- 1 1⁄2 teaspoons pumpkin pie spice
- 1 1⁄2 teaspoons cinnamon
- 1⁄4 cup sugar-free syrup, like cary's
- cooking spray
Directions
- Combine the pancake mix, pumpkin pie spice, and cinnamon together in a small bowl.
- Add the water, vanilla, and pumpkin puree to the dry ingredients, and mix well.
- Coat the griddle (or a frying pan) with the cooking spray, then place over medium heat. Let the pan heat for 2 minutes.
- Pour pancake mix onto griddle to make 4 pancakes. When the edges harden and bubbles surface, turn the pancakes over until done.
- Serve with sugar-free syrup, and enjoy!
