Healthy Meatball Stroganoff With Brown Rice

A lower fat, high protein Stroganoff recipe. For a few extra calories you can serve over egg noodles instead of brown rice. Add a salad for a complete meal. Show more

  1. Form ground beef into small meatballs.
  2. Heat olive oil in skillet and brown meatballs on all sides. Remove and keep warm.
  3. Add onion to skillet and cook until tender and beginning to brown.
  4. Add minced garlic and cook for about 2 minutes more.
  5. Add flour, mix well, and cook until beginning to brown. Add beef broth, stir well, and cook until slightly thickened.
  6. Add pepper, Worcestershire sauce, and mushrooms, and cook until mushrooms are tender.
  7. Stir in yogurt, then add meatballs.
  8. Cook until heated through, but do not boil.
  9. Taste sauce and correct seasonings, if necessary.
  10. One serving is 1/4 recipe and 3/4 cup brown rice.
