Healthy Curried Chickpeas & Cauliflower With Rice

Serves: 2-4
Ingredients
- 1⁄2 teaspoon curry powder
- 1 small onion, chopped
- 1 tablespoon olive oil
- 1 1⁄2 cups cauliflower, chopped
- 1⁄2 cup canned chick-peas, rinsed and drained
- 2 tablespoons raisins
- 1 cup cooked rice
- 1 scallion, chopped (optional)
Directions
- Saute curry powder and onion in olive oil for 3 mintues.
- Add cauliflower and cook for 8 mintues, or until tender.
- Add chickpeas and raisens and cook for 3 to 4 minutes, or until warm.
- Place curry mixture on top of rice and top with scallion.
