Healthy "creamy" Tomato Sauce

Yields: 3 cups
Ingredients
- 1 tablespoon extra virgin olive oil
- 1 small onion, diced
- 1 garlic clove, minced
- 1 (14 1/2ounce) can diced tomatoes, Italian (basil, garlic, oregano)
- 1 1⁄2 ounces Laughing Cow cheese, Light Swiss Flavor (2 wedges)
- 1 tablespoon reduced-fat parmesan cheese
- 1⁄4 teaspoon basil
- 1⁄4 teaspoon oregano
- salt and pepper
Directions
- Heat EVOO in skillet and add onion and garlic. Sautee until the onions are translucent.
- Add can of tomatoes (Juice and all), allow for mixture to come up to heat.
- Add wedges of cheese, and Parmesan and mix to combine, until cheese is melted and the mixture takes on a light "cream" sauce look.
- Add any fix-in's (I like seafood sausage medallions) and serve over pasta!
