Healthy Chocolate Chip Muffins

  1. Preheat oven to 400°F.
  2. Grease 12-18 muffin cups (12 for larger muffins, 18 for regular muffins- 2/3 full).
  3. In a large bowl, stir together flour, sugars, baking powder, chocolate chips, and salt.
  4. In another bowl, stir together milk, eggs, butter, and vanilla until blended.
  5. Make a well in center of dry ingredients.
  6. Add milk mixture and stir just to combine. DO NOT OVER MIX.
  7. Spoon batter into prepared muffin cups.
  8. Now bake for 15-20 minutes or until a toothpick inserted to the center comes out virtually clean.
  9. Remove muffin tin to wire rack. and cool for approx 5 minutes.
  10. Remove from tins to finish cooling.
  11. Serve warm or completely cool.
  12. feel free to add other ingredients in or substitute fruit for the chocolate chips. also, a little cinnamon in the batter tastes quite good. these muffins also freeze well!.
