Healthy Banana Peanut Butter Raisin Cookies

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl, mash the bananas, then stir in the apple sauce, vanilla and almond extract, peanut butter, salt, cinnamon, honey and shredded coconut.
  3. Stir in oats and raisins.
  4. Using a small cookie scooper, spoon about 1 tablespoon of cookie mixture onto a pan greased with coconut oil (or an oil of your choice).
  5. Flatten and shape your cookie to your liking.
  6. Bake for 15-20 minutes.
  7. Allow to cool for 10 minutes, then eat, enjoy and share the goodness.
  8. Variations: Instead of raisins, you can add chocolate chips, craisins or chopped walnuts.
