Healthy Banana Peanut Butter Raisin Cookies

Ingredients
- 1 cup of 3 ripe banana
- 2⁄3 cup peanut butter
- 1⁄2 unsweetened applesauce
- 1 1⁄2 cups rolled oats (or 2 cup of quick oats)
- 1 teaspoon vanilla extract
- 1⁄2 teaspoon almond extract
- 2 tablespoons honey
- 1⁄4 teaspoon salt
- 1 teaspoon cinnamon
- 1⁄2 cup of shredded unsweetened flaked coconut
- 1⁄3 cup raisins
Directions
- Preheat oven to 350 degrees.
- In a large mixing bowl, mash the bananas, then stir in the apple sauce, vanilla and almond extract, peanut butter, salt, cinnamon, honey and shredded coconut.
- Stir in oats and raisins.
- Using a small cookie scooper, spoon about 1 tablespoon of cookie mixture onto a pan greased with coconut oil (or an oil of your choice).
- Flatten and shape your cookie to your liking.
- Bake for 15-20 minutes.
- Allow to cool for 10 minutes, then eat, enjoy and share the goodness.
- Variations: Instead of raisins, you can add chocolate chips, craisins or chopped walnuts.
