Healthy Apricot Cookies

Ingredients
- 1 cup all-purpose flour
- 1⁄4 cup cake flour
- 2 tablespoons cake flour
- 3⁄4 cup whole wheat flour
- 1⁄2 teaspoon baking soda
- 3⁄4 teaspoon baking powder
- 1⁄2 teaspoon salt
- 1⁄2 cup butter flavor shortening, room temp
- 1⁄2 cup brown sugar
- 1⁄2 cup honey
- 1 egg
- 1 egg yolk
- 1 cup dried apricot, chopped
- 1⁄2 cup sunflower seeds
Directions
- Preheat oven to 300.
- Cream shortening and brown sugar. Mix in eggs. Add vanilla and honey.
- Mix flours, baking soda, baking powder, and salt. Fold into wet ingredients until just mixed. Add apricots and sunflower seeds.
- With wet hands roll about a tablespoon of cookie dough into a ball. Bake cookies for 20 minutes til edges are a little brown.
