Healthy 3 Bean Salad

Inspired by a similar salad served at Yaga's Cafe in my former home town of Galveston Texas. A great light lunch or side dish. Use fresh if good tomatoes are available, otherwise canned works well. Use extra virgin olive oil. Show more

Yields: 5 cups

Ingredients

  • 1 (15 ounce) can black beans, drained
  • 1 (15 ounce) can  red beans, drained
  • 1 (15 ounce) can chickpeas, drained
  • 1 (11 ounce) can white shoepeg corn, drained
  • 2  cups tomatoes, diced
  • 12 cup onion, chopped
  • 1  tablespoon olive oil
  • 3  tablespoons rice vinegar
  • 2  tablespoons  balsamic vinegar
  • 1  teaspoon  sesame oil
  • 14 teaspoon  garlic salt

Directions

  1. Mix ingredients and adjust vinegars and salt to taste.
