Healthier Pumpkin Cookies

This is a redo of my Grandmother's Pumpkin Cookies. They were not very unhealthy to begin with but I have tried to make them healthier and they turned out pretty good. I am curious about the nutritional value that comes up here and wanted to share them with anyone who is looking for healthier treats. Show more

Directions

  1. Cream sugars and applesauce. Add egg beaters, pumpkin and lemon rind & juice. Mix dry ingredients together and mix in with wet ingredients, just until mixed. Add raisins, nuts, or other add ins. Drop by tablespoonsful onto baking sheet lined with parchment paper. Bake at 350 for about 15 minutes.
  2. I also like to add a mixture of craisins and semi sweet chocolate chips instead of the raisins.
