Healthier Honey Wheat Banana Bread

Ingredients
- 2 cups whole wheat flour
- 1 teaspoon baking soda
- 1⁄4 teaspoon salt
- 1⁄2 cup sugar-free applesauce
- 3⁄4 cup honey
- 2 eggs, beaten
- 3 -4 mashed overripe bananas
- 1 teaspoon vanilla
- 1 cup chopped nuts (optional)
Directions
- Preheat oven to 350 degrees. Lightly grease a 9" x 5" loaf pan.
- In a large bowl, combine flour, baking soda, and salt.
- In another bowl, mix together applesauce and honey. Stir in eggs, banana's and vanilla.
- Stir banana mixture into flour and stir just until moistened.
- Add nuts if desired.
- Pour into prepared pan and bake for 60 minutes or until a toothpick inserted in the center comes out clean.
- Cool bread in pan for 10 minutes, then turn out onto wire rack.
