Healthier Banana Bread

Ingredients
- 1 1⁄2 cups whole wheat flour
- 1 cup quick-cooking oats
- 1 teaspoon baking soda
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon cinnamon
- 1⁄4 cup brown sugar
- 3 bananas, well ripened and mashed
- 2 eggs
- 1⁄3 cup coconut oil or 1⁄3 cup vegetable oil
- 2 tablespoons maple syrup
- 1⁄4 cup Greek yogurt
- 1⁄2 teaspoon vanilla
Directions
- Heat oven to 350 degrees.
- Whisk dry ingredients including flour, oats, baking soda, salt, cinnamon, and sugar. Set aside.
- Stir together mashed bananas, eggs, oil, syrup, yogurt and vanilla.
- Slowly add dry ingredients to wet. Mix just until combined.
- Fold in chocolate chips, or chopped walnuts, if desired!
- Pour batter into greased loaf pan.
- Bake for 40 - 45 minutes.
- Let bread cool in pan for 10 minutes and turn out onto cooling rack before slicing and enjoying!
