Hazelnut Baked Plums With Orange Cream

  1. Lay the plums, cut side up, in one layer in a buttered oven proof dish.
  2. Toast the hazelnuts in a pan,shaking until even.
  3. Reserve 3 tablespoons.
  4. Grind the rest in a blender.
  5. With a hand blender or wooden spoon, cream the butter and sugar until softened and pale, about 5 to 8 minutes.
  6. Beat in egg, stir in cinnamon, flour and round hazelnuts.
  7. Spoon a little on to each plum.
  8. Roughly chop the reserved hazelnuts; scatter on top.
  9. Heat oven to 190°C (375°F).
  10. Grate zest of one orange.
  11. Whip the cream and icing sugar so that it just holds its shape.
  12. Fold in most of the zest.
  13. Put in a bowl, sprinkle with remaining zest, wrap and chill in fridge.
  14. Pour juice of both oranges around the plums.
  15. Bake uncovered for 30 to 35 minutes, until tender.
  16. Remove from oven and let sit 10 minutes.
  17. Serve warm with the cream.
