Hawaiian Muffins

This recipe came from a friend. The muffins are moist, taste great, and they freeze well.

Yields: 12 Muffins

Ingredients

  • Dry Ingredients

  • 2  cups flour
  • 13 cup sugar
  • 2  teaspoons baking powder
  • 12 teaspoon salt
  • 1 (3 1/2ounce) jar  salted roasted chopped  macadamia nuts (about 1 cup)
  • 23 cup flaked coconut
  • 12 cup  chopped  dried pineapple
  • Wet Mix

  • 34 cup milk
  • 12 cup  melted & cooled butter or 12 cup margarine
  • 1  lightly beaten egg
  • 1  teaspoon vanilla

Directions

  1. In a bowl combine first 4 dry ingredients.
  2. Stir in rest of dry ingredients; mixing to coat.
  3. In another bowl mix together the wet mix ingredients.
  4. Add wet mix ingredients to dry ingredients until just combined.
  5. Spoon batter into prepared pans and bake at 400ºF for 15-20 minutes or until tests clean.
  6. Makes 12.
  7. These muffins freeze well.
