Hannah's Toffee Cookies

Ingredients
- 1 cup sweet butter, softened
- 1 cup firmly packed dark brown sugar
- 1 egg, separated
- 2 cups all-purpose flour
- 1⁄2 teaspoon salt
- 1 1⁄2 teaspoons cinnamon
- 1⁄2 cup walnuts or 1⁄2 cup pecans, chopped
Directions
- Preheat oven to 350 degrees.
- Cream butter and sugar until fluffy; beat in egg yolk.
- Mix flour, salt, and cinnamon; beat into butter mixture.
- Pat thinly into un-greased 15 1/4 x 10 1/4-inch baking pan. Lightly beat egg white and brush over batter. Sprinkle with nuts.
- Bake 25 minutes or until firm to touch.
- Cut into squares while still warm.
- Tips: These cookies are also attractive cut diagonally into diamonds. After cutting, remove them from the pan to cool.
