Hamburgers Sans Ham (1950)

Yes, I know it's a silly title. It comes from a goofy old cookbook called "Wolf in Chef's Clothing, the Picture Cook and Drink Book for Men." All the recipes in the book are done in pictures, but I've translated them into words for you. These are really more hamburger steaks than burgers. I don't usually add binders to my hamburgers, but I couldn't resist the rye bread in this recipe. I've increased the number of servings; the original said that 1 1/2 pounds of meat would only serve four. Feel free to reduce the amount of butter, if any. Show more

Directions

  1. Knead the bread crumbs and meat together.
  2. Mix in pepper, onion, egg, salt and pepper.
  3. Shape into six patties.
  4. Melt butter in a skillet.
  5. Add meat and cook to desired doneness, 4-6 minutes per side.
  6. Place on a serving platter and pour pan juices over meat.
