Hamburger and Vegetable Soup

Ingredients
- 12 ounces ground beef
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1 1⁄4 quarts beef broth
- 1 (15 ounce) can tomato sauce
- 1 cup diced potato
- 1 cup sliced carrot
- 1 cup corn
- 1 cup baby lima beans
- 1⁄3 cup sliced celery
- 2 tablespoons pearl barley
- 2 tablespoons brown sugar
- 2 tablespoons apple cider vinegar
- 3⁄4 teaspoon dry mustard
- 3⁄4 teaspoon dried thyme
- 1 large bay leaf
- salt and pepper
Directions
- Cook beef, onion and garlic in skillet until browned, about 5 minutes.
- Combine all remaining ingredients in slow cooker and cook on low 6-8 hours. Discard bay leaf, season to taste with salt and pepper.
