Ham Stuffed Manicotti

Found this somewhere online a long time ago. Sounds good.

Directions

  1. Cook manicotti as directed on package.
  2. Drain, rinse in cool water and set aside.
  3. Meanwhile, cook onion and garlic in 4 tablespoons butter or olive oil
  4. until tender.
  5. Add ham and set aside to cool for 10 minutes.
  6. Stir in 1/4 cup Parmesan cheese.
  7. Cook green pepper in 6 tablespoons butter or olive oil until
  8. crisp-tender.
  9. Stir in flour and cook, stirring constantly, until mixture bubbles, about 3 minutes.
  10. Add milk, and cook, whisking constantly, until sauce thickens.
  11. Stir in cheese.
  12. Mix 1/4 of cheese sauce with ham mixture.
  13. Fill manicotti shells with ham mixture.
  14. Place in greased 13 x 9 inch glass baking dish.
  15. Pour remaining cheese sauce over filled manicotti.
  16. Sprinkle with 1/2 cup Parmesan cheese and bake at 350 degrees for 30-35 minutes until bubbly.
