Ham in Cream Sauce

This is good served with Mac 'n Cheese, or scrambled eggs, or over toast.

Yields: 4 portions

Ingredients

  • 12 lb  boiled ham, cut into 1/2 inch dice (about 2 1/2 cups)
  • 2  tablespoons butter
  • 1  teaspoon butter
  • 2  tablespoons flour
  • 1  cup milk
  • 18 teaspoon nutmeg (try fresh ground)
  •  salt & freshly ground black pepper
  • 1  tablespoon shallot, minced
  • 3  tablespoons dry sherry

Directions

  1. Heat 2 tablespoons butter in a skillet. Sprinkle flour around pan and stir with a wire whisk. Cook 30 second to 1 minute. Add milk, stirring with the whisk. Season with nutmeg, salt and pepper. Turn off heat and allow to cool, stirring occasionally, about 5 minutes.
  2. Meanwhile, in another skillet heat 1 teaspoon of butter and cook ham for 1 minute. Add shallot, cook another minute. Stir in the sherry and heat through. Add the cream sauce and turn off the heat. Serve.
