Ham Chablis

I found this in a wine-tasting publication a few years ago at a winery. It tastes really good!

Directions

  1. Saute ham steaks in 1/4 c butter until lightly browned.
  2. Keep warm.
  3. In a saucepan, melt the other 1/4 c butter.
  4. Add mushrooms.
  5. Stir in flour, chablis and brandy over a simmer, stirring constantly for 5 minutes.
  6. In a bowl, mix egg yolks, cream and cheese.
  7. Season to taste with salt and pepper.
  8. Add to brandy mixture.
  9. Place ham steaks on platter and spoon the sauce evenly over them.
  10. Serve garnished with peas.
