Ham, Bean and Pineapple Salad

Ingredients
- 175 g canned pineapple, cut into chunks
- 150 g thickly cut ham, cubed
- 100 g cannellini beans, drained and rinsed
- 2 tomatoes, chopped
- 2 large cos lettuce leaves
- 1 tablespoon pineapple juice
- 1 tablespoon olive oil
- 2 teaspoons white wine vinegar
- 1⁄2 teaspoon Dijon mustard
Directions
- Mix everything except the lettuce together in a bowl.
- Place the lettuce leaves in a plastic container and pile the salad on top.
- This will keep in the fridge for 3 days, so make triple quantities to make lunchboxes easier for the remainder of the week!
