Ham and Potato Scones

A breakfast treat you can start either with fresh mashed or leftovers, cook time depends on this.

Ingredients

  • 4  medium potatoes, cooked and mashed
  • 4  mushrooms, finely diced
  • 4  slices ham, finely diced
  • 1  onion, finely diced
  • 14 cup flour
  • 1 12 tablespoons butter
  • 1  egg, beaten
  •  salt & pepper
  •  oil (for frying)

Directions

  1. Combine all ingredients except oil. Turn onto a floured board and knead until smooth. Roll out like a large sausage. Cut into 10 slices.
  2. Heat oil and fry each slice until browned on both sides. Serve with butter for breakfast.
