Ham and Potato Omelet

Ingredients
- 1⁄4 cup 1% low-fat milk
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon black pepper
- 4 large egg whites
- 3 large eggs
- 1 tablespoon vegetable oil
- 4 cups packaged frozen hash brown potatoes with onions and bell peppers (such as Ore-Ida Potatoes O'Brien)
- 1 cup chopped 33% -less-sodium ham
Directions
- Preheat oven to 450°.
- Combine first 5 ingredients, stirring with a whisk.
- Heat oil in a large cast-iron skillet over medium-high heat. Add potatoes; sauté 5 minutes. Stir in ham; sauté 1 minute.
- Stir in egg mixture. Bake at 450° for 12 minutes or until set. Cover and let stand 10 minutes. Cut into 8 wedges.
