Ham and Cheese Breakfast Bake

I have tried many breakfast casseroles, some good, some not so good. True to my nature, when I find one I like I just have to put my own touch on it and this recipe is no exception. My addition to this plain egg dish is the red, yellow and green peppers. This is a quick, inexpensive recipe good for small budgets. Kids love it. Show more

Serves: 8

Ingredients

  • 1 (8 ounce) package  refriderated  crescent rolls
  • 8  ounces smoked ham, chopped
  • 6  eggs (1 1/2 C of egg substitute can be used)
  • 12 cup  cold milk (low fat or fat free milk will work well)
  • 1  cup  shredded cheddar cheese
  • 1  cup  shredded mozzarella cheese
  • 23 cup bell pepper, finely chopped red green & yellow bell peppers
  • 1  dash fresh ground black pepper

Directions

  1. Preheat oven to 350°F.
  2. Finely chop peppers.
  3. Unroll Crescent dough and press into the bottom of a 9" x 13" baking dish making sure to cover seams and holes.
  4. Sprinkle ham and chopped peppers over the crust.
  5. Whisk milk, eggs and pepper until blended.
  6. Top with cheeses.
  7. Place in center of oven and bake 25 minutes or until center is set.
