Ham and Bean Soup

Ingredients
- 8 ounces cubed ham
- 1⁄4 cup finely diced celery
- 1 cup water
- 1 cup low sodium chicken broth
- 15 ounces black soybeans (recipe called for Eden brand)
- 1⁄4 cup tiny diced carrot
- 2 teaspoons onions, minced
- 1⁄4 teaspoon minced garlic (optional)
- 1⁄8 teaspoon cayenne pepper
- 1⁄4 teaspoon cumin
- 1⁄4 teaspoon salt
Directions
- In a medium sauce pan brown the ham.
- Add 1 cup of water and scrape glaze off bottom of pan.
- Add low-sodium chicken broth.
- Drain the water from the can of beans. Add beans to the sauce pan.
- Add all other ingredients. Stir.
- Bring to a boil; turn down heat and simmer for at least 1 hour to bring out the flavors — the longer, the better (3+ hours being best.).
